New categorie classifications and AI

As part of our development on AI classification suggestions, we realized that the standard categories in GoFAST seemed too limited. This reduces the relevance and possibilities of the feature. Since we did not find any standard (except by sector), we propose here the expansion of categories for a future version of GoFAST and invite your feedback on this matter.

It should be noted that certain categories such as Mail or Courrier are more of a "Type" than a category, as they are currently. Similarly, outgoing/incoming should rather be considered a sub-category, a concept we do not currently have in GoFAST.
